Time: 40 minutes
1 cup fresh nettle leaves
6 pastured eggs
2 Tbs milk or milk alternative like almond or coconut
1/4 onion chopped small
1/2 cup vegetables of choice (bell peppers, tomatoes, white sweet potatoes, garlic, etc) optional
1/2 lb crumbled sausage optional
Salt and pepper to taste
Harvest, handle, and trim leaves off stalk with gloves. Chop into strips about 1/8 - 1/4 inch wide, then in half.
Whisk together eggs, milk, salt and pepper. Pour into a 8" x 8" baking dish.
Brown sausage and crumble. Drain on a plate with a paper towel.
Saute onions and vegetables until onions are clear. Add sliced or minced garlic at the end of this stage if desired.
Stir nettles and vegetables into egg mixture.
Bake 350 degrees for 20-30 minutes.
